Turbo Cider 28/05/16

The Ingredients

Recipe Measure
Batch Volume 20 Litres
Apple Juice (100%) 16 Litres
Cranberry Juice 4 Litre
Cup of Strong Tea 12 Tea Bags 1 litre
Wine or Cider Yeast 2 Packet
Yeast Nutrient 2 heaped Tsp
Fermentation Temperature 20C

Method

This basic method makes a bone dry cider but is very easy to follow. If you like your Cider a little sweeter then you will need to sweeten the finished Cider. See the section below on Sweetening, as this has some considerations.

  1. Fill fermenter with juice.
  2. Make 1 litre of strong tea with 12 tea bags.
  3. Add 1 kg of sugar to Tea and then add to fermenter.
  4. Sprinkle in the yeast and let it stand for a while (10 min) to re-hydrate.
  5. Add 2 tsp of yeast nutrient, stir well and close lid with airlock fitted.
  6. after 10 days add stabiliser and stir well.
  7. Leave to settle/clear for 7 days.
  8. Rack off to bucket and sweeten with 660g of sugar as ended up with 22L.
 

Tasting Notes

First tasting during after sweetening - There is a bitter after taste in this cider. I think that I may have used too much Cranberry but this may subside with conditioning.
